Cake is a strawberry box mix, frosting is homemade cream cheese.
I appreciate all of your support for the very mundane but stressful completion of my tax returns. First year without W-2s and I slightly underpaid the first two quarters since I had no idea what my income would be. I’ll be eating ramen (and box cake) instead of steak this week but I won’t be panhandling outside of a M cDonalds so I’m alright with it!

Ramen can be awesome, you just gotta do it like Koreans (or probably most East Asian countries) do.
Gotta look for Shin Ramyun (or Shin Black which has a richer tasting soup) which has a spicy, meaty flavour, or Neoguri which is a spicy seafood flavour.
Add mushrooms (enoki is best but regular buttons are yum too) , onions (green onions are better) , frozen corn, pork (some like bacon but I think it’s too strong/salty, I prefer a pork loin) and other veg like some spinach, cabbage, bok choy, etc. The great thing is that you only need some, not all of these ingredients, for a fucking delicious ramen, and most of these ingredients are either already on hand or cheap to buy.
It gets even better if you have access to other stuff like sesame oil and gochujang so that you can further add to the flavour to suit your own tastes.
Heck, a lot of Korean restaurants sell the same premade ramen you can buy in stores, but they add their own seasonings and ingredients to make it unique.
This is the way.

I didn’t realize how much I was stress-eating at my old job until I stepped on the scale about a month ago. I’m at pre-office-job (12 years ago) weight again without even trying, and this is after buying my beloved Kitchenaid and everything.

Thanks! I actually had to do a little work to make the box mix bake right at altitude. These guys won’t print the recipe adjustment on the instructions.

Ah, most box mixes here have a little note somewhere on them to add however much flour and liquid above 3,500 feet, sometimes with a change in oven temperature and cook time. Pillsbury has declared that it’s too unpredictable so they won’t print guidelines.
My favorite cookbook is called Pie in the Sky. A ll of the recipes have adaptations up to 9,000 feet but it also tells you how to tweak existing recipes. Could’ve used it the first time we tried to make fudge in Telluride - we basically ended up with frosting that never set.

It took me from April to December to go from 200 down to 175 (the last 5 lb were the toughest).
I celebrated by having doughnuts at New Year’s Eve
My blood pressure is normal now and I’m not pre-diabetic anymore. Just have to get my LDL cholesterol down.

It’s pretty common in the USA/Mexico . Enough of our population lives at 3500 ft or higher (green area in the image below) that many boxed making mixes have corrections to the instructions for high elevation in small print somewhere on them. Above 3,500 feet the air pressure is reduced enough that you need to make corrections to anything that has leavening in it. I live at 7,320 feet and cookies/cakes/breads here usually come out of the oven flat and dry if you don’t make at least some attempt to adjust for the elevation here.

Pillsbury? I’m so annoyed that they took off the corrections because I have the double whammy of living at high altidude (7,320 ft) and having Celiac disease in the household. They are the only ones making affordable gluten-free mixes that actually taste good - seriously the only others that I’ve made that come close cost like 3x as much - but getting them to not come out deflated has been a crap shoot.

While googling I found a thread on their Facebook page stretching back FOUR YEARS of people complaining about the missing altitude info. There were a number of folks asking for help with the gluten free mixes. Early in the thread they were responding with useful adjustments but their more recent answers were pretty vague.
And 7,320 sounds like it would be way worse for ba king. Denver is bad enough.
